Oligofructose derives from inulin and has the same structure with a peculiarity, which has 10 units less than Fructose.

On the palate, it has a sweetness of about 40% lower than sugar.

It is found in nature in:

  • onion
  • garlic
  • wheat
  • artichoke
  • banana
  • leek
  • chicory
Both inulin and oligofructose are used as a substitute for sugar to decrease caloric intake in baked goods, dairy products, ice cream etc.
