Glycine and its sodium salt is a food additive with the function of a flavour enhancer. It therefore serves to improve taste. It is labelled with the number E640 on the European list of food additives. Glycine is an amino acid, a mixture of natural substances and, in industrial uses, derived from animal bones.

In cosmetics, Glycine, as the primary amino acid in collagen, is used to repair damaged skin and improve their texture.
