Basmati rice (Oryza sativa var japonica) is a variety of white rice, aromatic, originating in India and Pakistan, with large grains, mainly used in oriental dishes.
The particular taste of this rice is due to more than 100 volatile organic aromatic compounds including 13 hydrocarbons, 14 acids, 13 alcohols, 16 aldehydes, 14 ketones, 8 esters, 5 phenols etc. (1).
Compared to Jasmine, it has a higher protein content (8.25% versus 6.98%), but lower amylose content (21.5% versus 23%).
