Cocoa paste or, better, cocoa mass is the first product in raw form that is obtained from the complex processing of cocoa, after the mixing process. Excellent.
Cocoa butter is obtained from the processing of the cocoa mass. Its use requires the use of presses with 400 atmospheres that compress and heat the cocoa paste in order to obtain about 50% of the fat called cocoa butter. It is used in the food sector as an ingredient in baked goods, chocolate, fried foods and to keep cooked foods crisp. Excellent.
Low-fat cocoa. Unlike normal cocoa, which has a minimum percentage of cocoa butter of 22/24%, low-fat cocoa has a lower percentage that is around 10/12%. This is the only difference between cocoa and low-fat cocoa. Excellent.
Maltitol is a synthetic sweetener, a disaccharide, derived from maltose by a process of dehydrogenation, has a lower calorific value than sucrose, or sugar, but almost the same sweetening power. Advantages: suitable for diabetics, very stable, does not alter. Only contraindication: Not to be consumed in large quantities because it could produce laxative effects.
