The phytochemical composition of wheat bran shows micronutrients and bioactive compounds of which approximately 52% are carbohydrates but not starch, 15% starch, 10% protein, 5% minerals, 4% fat.
Some organic acids of interest to human health are present in wheat bran: ferulic acid, caffeic acid, syringic acid, p-cumaric acid, vanillic acid.
