Ingredients

Let us examine the most significant ingredients in order of quantity as indicated on the label. I provide a brief summary for reasons of space. For the full text, studies and bibliography, just click on the ingredient and, if you want to go deeper, it is perhaps a little complex reading because these are scientific studies, but it clarifies the ingredient/health relationship.

Farina di grano tenero tipo 2  Type 2' wheat flour is a wholemeal flour that has undergone very little industrial processing and has therefore retained almost all the nutritional characteristics of wheat. It is used in artisanal baked goods and is little used by large food industries. It gives bread, biscuits and cakes a pleasant aroma and crunchiness. 

Zucchero di canna Despite being made from sugar cane (Saccharum officinarum), it is still a refined sugar.

Farina integrale di orzo. Barley contains functional ingredients of interest to human health such as beta-glucans, polysaccharides, the main components of the soluble part of dietary fibre. They facilitate the regular function of the gastrointestinal tract, glucose homeostasis and energy regulation in the human body. 

Olio di semi di girasole. It is characterised by a high niacin, vitamin B6 and folate content, as well as a high linoleic acid content, all components with antioxidant activity. It has a moderate sodium content and is the best oil after olive oil. In particular, the high oleic is a version with lower levels (8.5 per cent) of saturated fats and vitamins E, F.

Farina integrale di avena.  It is an unrefined flour so it retains at least some of the plant's nutritional properties.

Amaranto soffiato. Amaranth contains a good content of amino acids including lysine, an essential amino acid.

Quinoa soffiata. Important crop with high nutritional value. Quinoa grains have high concentrations of polyphenols and antioxidants such as α- and γ-tocopherol compounds with anticarcinogenic and anti-inflammatory activities. They are also a good source of vitamin C, E and folic acid. 

Semi di zucca. They have a high content of carotenoids, fat-soluble vitamins, carotenoids (lutein and zeaxanthin), vitamin E (α- and γ-tocopherol).

Semi di lino. The seeds contain interesting antioxidant and anti-inflammatory components such as phenylpropanoid compounds, vanillic acid, vanillin, carmaric acid, ferulic acid and are the richest source of alpha-linolenic acid as well as an excellent source of dietary fibre.

Agenti lievitanti (tartrati di potassio, carbonati di sodio, carbonati di ammonio). They are present in minute quantities and have no particular contraindications as classic leavening agents.

Sale. The less of it the better. Salt consumption should be reduced as it may cause damage to the cardiovascular system and increase the values of harmful LDL-cholesterol and cause hypertension, obesity and other serious diseases.

Estratti di rosmarino. Among the polyphenolic components present in rosemary, carnosic acid has antioxidant and antimicrobial properties and rosmarinic acid has neuroprotective and anti-inflammatory properties.
