Thaumatin is a plant protein obtained industrially by a process of acidic aqueous extraction from the plant Thaumatococcus daniellii.
What it is used for and where
Food
Ingredient included in the list of European food additives as E957 with a sweetener function. It is authorised in the EU in 15 food categories with maximum permitted levels ranging from 0.5 to 400 mg/kg and at quantum satis in the three food categories of table-top sweeteners.
Cosmetics
Perfuming. Unlike fragrance, which can also contain slightly less pleasant or characteristic odours, the term perfume indicates only very pleasant fragrances.
Safety
EFSA's Scientific Panel on Food Additives considered that a numerical Acceptable Daily Intake (ADI) is not necessary (1)
