Amylopectin is a branched polysaccharide composed mainly of glucose.
It is found, in the measure of approximately 70-80% in starch which is the primary form of storage of carbohydrates in tubers of plants and seeds, together with Amylose which is in a lower proportion, with 20-30%.
Amylopectin plays an important role in the transformation of starch and strongly influences its physical and chemical characteristics.
